EGGS AND ASPARAGUS

FOR 6 SERVINGS:

  • asparagus 800g
  • eggs 8
  • salt as needed
  • pepper as needed
  • butter 50g
  • grated parmesan cheese 50g 

Boil the asparagus in abundant salted water. Before to drain, heat the butter in a frying-pan and cook "sanny side eggs". Put the eggs on a dish then slide the asparagus over them. Salt, pepper and, if you like, add a spoon of grated parmesan cheese.
