MEATBALLS

Ingredients for 12 servings: 400 g minced veal, 200 g minced beef, 200 g minced pork, chopped parsley, 2 cloves garlic, 2 tablespoons olive oil. 1 cup milk, 100 g bread crumbs, 125 g parmesan cheese, 4 eggs, Salt, Pepper, extra virgin olive oil for frying 

Preparation: Combine veal, beef and pork and a large bowl, add the other ingredients and mix all together using your bare hands. The mixture should be very moist but still hold its shape when rolled into meatballs, shape into meatballs. Now heat extra virgin olive oil in a large skillet and fry meatballs in batches, until they are nicely browned, remove them from the heat and drain on a paper towel.
